Best Molasses Sugar Cookies Ever!

I hope you are off to a wonderful December so far! We are enjoying the sights and sounds of the season,
 as well as the slower pace in the barnyard that winter brings.



I am so excited about these molasses cookies! One of my farm girl friends made these and brought them to a birthday party we recently went to. Oh my! They were chewy and full of flavor! Perfect!
 I have tried sooo many recipes in search of the perfect molasses cookie. 
Here it is, AND it's dairy free (I modified it here and there.:))

The original recipe called for 3/4 cup of shortening. I have never bought shortening and I certainly wasn't going to start now! And 3/4 of a cup seems like a bit too much fat for no reason.



You will need:
1/2 cup of canola oil or you could use a stick of melted butter and then cooled a little (YUM!) or put the 3/4 of melted shortening in. Choices!!
1 cup of sugar and extra for rolling
1/3 cup of molasses
1 egg
2 tsp. of baking soda
1/2 tsp. of cloves (optional)
1 tsp. of ginger
1 tsp. of cinnamon
I threw in a dash or two of allspice and a dash of nutmeg, but you don't have to.
1/2 tsp. of salt
2 cups of flour

Combine oil, sugar, molasses, and egg. Beat well. Combine dry ingredients in a separate bowl and give it a good mix. Combine wet and dry to make a nice dough. You can chill it if you need to, but I have not had to because of I have not needed to cool any butter.

Form balls as large or as small as you want. The bigger the ball, the bigger the cookie. Roll it in extra granulated sugar. This gives the cookie a pretty shimmer to it. Place them on a greased cookie sheet or silpat. Bake at 350 degrees for 8-10 minutes. You know your oven. If you leave them in too long, they will be more like ginger snaps.



These are just mouth watering. 
They will for ever have a place in my recipe box and I will never try another molasses cookie recipe again!:)
